Summer Samplers

Easy as Pie Pie

Ingredients:
1 graham cracker pie crust
1 large pkg cream cheese flavored pudding
whip cream
sliced strawberries
toasted coconut

Assemble:
Make the pudding according to package, add to pie crust, top with whip cream, strawberries, and coconut. eat :)

Zucchini and Chicken Salad

1/4 cup plus 1 Tbs. olive oil
1/4 cup fresh lemon juice
coarse salt and ground pepper
1 Tbs. balsamic vinegar
2 tsp. white sugar
1 1/4 lbs. zucchini, thinly sliced
1 lb. boneless, skinless chicken breast
(or I used the meat from a store bought rotisserie chicken)
1 bunch (about 8 oz.) fresh spinach, chopped
1/2 red onion thinly sliced
3/4 cup pecans, chopped
1/4 grated Parmesan

1. In a large bowl, whisk together 1/4 cup oil and lemon juice, vinegar, and sugar; season with salt and pepper. Add zucchini; toss to coat, and letmarinate while cooking chicken.

2. In a large nonstick skillet, heat remaining tablespoon oil over medium. Season chicken with salt and pepper. Cook chicken until goldenbrown and opaque throughout, about 7 minutes per side. Or if using rotisserie chicken, just heat it through.

3. Toss chicken with zucchini mixture, spinach, onion, pecans, and Parmesan. Serve.

Manti Chicken

Manti Chicken

3-5 lbs. chicken tenders
3/4 C. oil
1 C. soy sauce
1 tsp. garlic, chopped
2 C. lemon-lime soda (i.e. Sprite)

Combine all ingredients in a ziploc bag (2 if needed). Marinate meat for 6 hours before grilling it. Delicious on its own or with BBQ sauce for dipping.

Easy Southwestern Salad

This salad is so simple and delicious!

Ingredients:

2 heads of romaine lettuce
1 bunch of cilantro
1 can kidney beans, rinsed and drained
1 can black beans, rinsed and drained
1 can corn, rinsed and drained
2 avocadoes, cubed
1 can french fried onions
2-4 pieces of cooked and cubed chicken (I like to marinade mine in teriyaki.)
Dressing
1 cup bbq sauce
1 cup Ranch

Mix and then, chill in the fridge for an hour before serving (This makes a ton, so you may want to 1/2 the recipe.).

Wash and chop everything. Mix together (with the exception of the onions). Add onions separately, so they don't get soggy. Then, drizzle dressing over. Delicious!
